Salinas

Salinas is located in New York City’s vibrant Chelsea neighborhood. The restaurant’s name is inspired by the many salinas, areas where salt is harvested by the sea, along the Mediterranean coast of Spain and throughout the Balaeric Islands. Inspired by Spain’s lively culture, music and natural resources, Salinas will offer traditional regional Spanish cuisine as well as a selection of hot and cold tapas. Chef Luis Bollo (Mediterra in Princeton, N.J.), a San Sebastián native, will serve classic dishes from the country’s Mediterranean coast including a rotating house paella, Spanish vermicelli with chicken, chorizo, cockles and saffron aioli, ceviche Canario with albacore tuna, tomatoes, Canarian mojo, onions, cilantro and avocado as well as whole fish prepared a la plancha. Designed by Mary Catherine and Donald Mikula, the 90-seat space features handcrafted furnishings and details that feel contemporary yet evocative of old world New York. A striking retractable glass roof, custom-made blue stone fireplace and a water wall reminiscent of the Mediterranean sea create a warm and welcoming atmosphere. Wooden chairs sculpted by a local artist, limestone-covered walls, and Brazilian walnut floors are found throughout the three main spaces, which include a tapas room and bar, main dining room and 35-seat garden.
